I just had a lovely lunch that I assembled from some odds and ends that I scavenged out of the fridge this morning. It was so good that I felt moved to record it for posterity:
1. Take a small whole wheat tortilla, and spread it with a tablespoon or two of yogurt cheese (a thick Greek yogurt would probably work well too) mixed with za'atar* and chopped scallions.
2. Top with a generous handful of argulua.
3. Add a bit of leftover chopped roasted chicken. Roll up and eat. Make another if you feel like it.
The herbed yogurt really softens the flavor of the arugula, making it tangy and green tasting rather than in-your-face bitter.
*za'atar is a middle-eastern spice blend containing thyme, sesame seeds, and sumac. You can buy it in middle-eastern markets, or order it from Penzey's. Since I got ahold of some a few weeks back, I've been adding it to everything in sight, because it's delicious.
