Recipes that use beer?

So, one of the things that became apparent when I was unpacking the kitchen was that we have too much beer. See, every time we have a party, we buy beer, and we always buy a bit more than our guests actually drink. And we don't drink it ourselves. So, I've decided that I need to cook with it.

I have a couple of recipes for chili that use some beer, and [livejournal.com profile] zellandyne and I once concocted a beef braised with mustard and beer that was very tasty. And my mother has a tasty recipe for beer bread that I should get from her. But beyond that, I'm looking for ideas. Any of y'all out there have favorite recipes that use beer?

I recently marinated some bison chuck stew meat in approximately 40-40-10 beer, apple cider, and soy sauce with minced garlic and ginger to whim. Marinate 2-6 hours, brown meat, simmer 2-3 hours in marinade. Serve with roasted vegetables.

I assume it would work just as well with beef. I am torn between being charmed that I can buy bison meat and mildly dismayed that I can buy bison meat.

Does it help the mild dismay any to know that the bison are probably farm-raised just like regular beef cows, rather than being taken from wild herds? There's a bison ranch in West Virginia, just over the mountain from my mom's farm.

Oh, certainly these are farm-raised bison. I haven't looked to see where they're raised, but I assume it's just a few miles north of Seattle, where I've seen buffalo roaming just like cows.

I should probably be less dismayed to eat bison than to eat cow, since bison is less damaging to pasturage than cow is. It's a non-specific aethestic dismay, probably related to weird old misbegotten romantic notions of the wild west.

Beer-based batter for deep-frying fish is fairly traditional; I expect it would work pretty well for vegetables as well.

Oooh - I could certainly use up the beer stash working my way through those. The Cherry Beer Cake does look good, as does the Chocolate Porter cake.

You can also use beer for a rinse for your hair. I haven't tried it but have heard it does good things.

My mother tried the beer hair rinse thing back when she was in college, I think. She had beautiful hair, but smelled like a brewery.
