Project Beer: Round 3

Tonight's beer recipe involved adding a bottle to a pot of lentil soup. Very tasty. (I'm tempted to hypothesize that a bottle of beer can be substituted for the equivalent amount of water or stock in just about any soup or stew recipe with little harm and often some benefit.)

Certainly it can take the place of water or stock (or milk) in cheese sauce, so why not?

*nods* I think the important caveat is equivalent. Another flistie of mine was complaining that the local Irish pub makes a great shepherd's pie but anoints it with so much Guinness that it is, shall we say, not for the lightweights.

And what Nea said about cheese sauce - I think it's traditionally one of the components, or can be, of a Welsh rarebit.
